Title: Matzo Meal Onion Kugel (Pudding)

Yield: 10 Servings

2mdOnions, finely diced
1/4cCorn oil or rendered chicken fat (see SCHMALTZ recipe)
8 Eggs yolks
1/2cMatzo meal
2tsSalt
1/2tsWhite pepper
8 Egg whites, at room temperature

Preheat the oven to 350 degrees F.

In a frying pan, heat the corn oil/schmaltz. Saute the onion until it is lightly browned. Remove from the heat and allow to cool.

Using a mixer, beat the egg yolks until they thicken slightly and become light and fluffy. Fold into the egg yolk mixture the sauteed onions, matzo meal, salt, and pepper.

In another bowl, beat the egg whites until they start to form stiff peaks. Fold the whites into the yolk mixture. Grease a 2-quart casserole or souffle dish. Pour in the mixture. Bake in the preheated oven for 45 minutes to 1 hour, or until kugel is set and golden brown on the top. Makes 10 to 14 servings.
